Featuring premium local ingredients such as Toyomitsuhime figs, Fukuoka-grown Muscat and Kyoho grapes, and fragrant Yame tea, this seasonal afternoon tea presents a carefully curated selection of sweets and savouries that showcase the region’s rich agricultural heritage.

The seven sweet creations highlight a variety of Fukuoka specialities, including fruit sourced through the “Mottainaka” initiative, which gives new life to perfectly delicious produce that may otherwise go unused due to cosmetic imperfections. Savoury delights featuring spicy mentaiko and Yame tea, together with freshly baked scones, complete an elegant tea experience that celebrates the unique flavours of Fukuoka.

Toyomitsuhime Figs

Toyomitsuhime is a premium fig variety developed exclusively in Fukuoka Prefecture, where it can only be cultivated under the region’s unique growing conditions. Its name is a combination of “Toyo,” from Buzen, the area where it was developed, and “Mitsu,” meaning “honey,” reflecting its rich sweetness when perfectly ripened.

With an average sugar content of around 17 Brix, higher than that of typical figs, Toyomitsuhime is prized for its thick, ivory-white flesh and exceptionally smooth, melt-in-the-mouth texture. Rich, fragrant and naturally sweet, it offers a truly luxurious tasting experience.

Today, this prized fruit is primarily grown in the southern regions of Fukuoka Prefecture, including Yame and Asakura.

 

Kyoho Grapes

Kyoho grapes were first successfully cultivated in Kurume City, Fukuoka Prefecture, in 1957, making the region the birthplace of Japan’s most iconic and celebrated black grape variety.

Cherished by locals for nearly 70 years, these large, succulent grapes boast an impressive sugar content of approximately 17–20 Brix. Their rich sweetness is beautifully balanced by refreshing acidity, creating a full-bodied flavour with a clean and elegant finish.

Within Fukuoka Prefecture, Kyoho grapes are predominantly grown in the southern areas of Kurume, Yame and Asakura.

 

Shine Muscat Grapes

Developed in Japan, Shine Muscat has earned a reputation as one of the nation’s most sought-after premium grape varieties, admired both domestically and internationally. Its delicate, edible skin and exceptionally juicy flesh make it a delight to enjoy whole.

With an average sugar content of around 20 Brix, Shine Muscat grapes are prized for their refined sweetness, gentle acidity, abundant juiciness and distinctive floral aroma. Their elegant flavour profile has made them a favourite among fruit connoisseurs worldwide.

In Fukuoka Prefecture, the combination of warm days, cool evenings and pure water sources in the southern region provides ideal growing conditions, producing grapes of exceptional quality, flavour and freshness.

 

Mottainaka Fruits Preserves

Mottainaka is a sustainable collection of fruit preserves and fruit jellies crafted from carefully selected fruits grown throughout Kyushu, particularly in Fukuoka Prefecture. While these fruits may display minor blemishes or natural imperfections, their flavour, freshness and quality remain every bit as exceptional as premium-grade produce.

The name is inspired by the Japanese concept of “mottainai” – the belief that something of value should not be wasted simply because of its appearance. Through Mottainaka, these perfectly delicious fruits are given a second life as our chefs thoughtfully transform them into premium creations featured in our seasonal afternoon tea. By celebrating their natural flavour and character, each item showcases a sustainable approach to gastronomy while helping to reduce food waste.

Produced with care in Yame City, Fukuoka Prefecture, each preserve captures the fruits’ vibrant flavour and natural juiciness, celebrating both sustainability and craftsmanship in every spoonful.
