On 25 August, Bar36 proudly presents an exclusive one day takeover by Himkok, Oslo’s world-renowned cocktail bar, in collaboration with Perrier Japan.

For one day only, be transported to the heart of Norway as Maros Dzurus, Head Bartender of Himkok and Paul Voza, Head of Research & Development of Himkok, brings a curated menu of Cocktails and Canapés that highlight Nordic purity, seasonal ingredients, and modern mixology.

This immersive experience blends Norwegian innovation with Japanese hospitality, set against the panoramic views of the Osaka skyline.

A refined balance of Nordic sweetness. Nikka Yoichi Single Malt brings depth and smoke, layered with the delicate acidity of Norwegian Ice Cider and finished with a touch of cocoa bitters. A silky, structured cocktail— bold yet elegant.

Strawberry & Cardamom: 

Flavour Profile: Sweet | Sour | Fruity
Vibrant and aromatic. Nikka Coffey Gin’s citrus-forward base meets a house-made strawberry & cardamom shrub, sharpened with fresh lemon and softened by silky egg white. Finished with a splash of dry vermouth, it’s playful, balanced, and seriously drinkable.

Sage: 

Flavour Profile: Peppery | Herbal | Effervescent
An herbaceous highball with Mediterranean soul. Gin Mare pair perfectly with Paragon Timur cordial, sage, and a hit of brewed ginger, all lifted by sparkling Perrier. A refreshing cocktail— ideal for warm nights and long conversations.

Cardamon:

Flavour Profile: Refreshing | Sweet | Fruity
A modern tequila cocktail with a twist. Earthy tequila meets aromatic cardamom distillate and the subtle nuttiness of fino sherry. Palo santo paragon cordial brings an unexpected depth, topped off with Perrier for a clean, effervescent finish. Intriguing, exotic, and unforgettable.

Maroš Dzurus – Head Bartender, Himkok

 

 

A third-generation hospitality professional, Maroš Dzurus moved from Slovakia to Oslo in 2014, quickly rising through the ranks to become Bar Manager at Himkok. Known for his bold creativity and deep respect for Nordic ingredients, Maroš brings a dynamic, global approach to cocktail design. His leadership style is grounded in collaboration, empowerment, and continuous exploration of flavour.

 

 

Paul Voza – Head of Research & Development, Himkok

 

 

With roots in France and Mexico, and a career steeped in culinary exploration, Paul Voza shapes Himkok’s innovation programme. His unique palate and experimental flair are inspired by the intersection of cultures, bringing together Norwegian tradition with global influences to create cocktails that are thoughtful, expressive, and entirely original.
