Chef Hiroyuki Hanada prepares a festive menu using traditional celebratory ingredients, prepared with a uniquely local flair.

The Christmas Set Menu includes:

  • Walnut Tofu with Snow Crab, Chervil, Dashi Jelly, Foie Gras Marinated in Saikyo Miso with Salmon Roe Dressed with White Vinegar Cream
  • Scallop Dumpling, Carrot, Shirona Bok Choy and White Maitake Mushroom Soup
  • Selection of Sashimi
  • Wakasa Style Broiled Alfonsino with Sudachi Citrus, Lotus Root and Marinated Vegetable
  • Organic Beef with Japanese Sauce and Whole-grain Mustard, Soy Milk and White Miso Fondue with Steamed Vegetable
  • Lily Bulb Cake and Carrot with Starchy Mushroom Sauce
  • Rice Dish, Miso Soup and Japanese Pickles
  • Swiss Roll Cake and Assorted Seasonal Fruits with Wine Jelly
